I don't know if you have ever seen Cupcake Wars. It's a show on Food Network where bakers compete for the best cupcake and win prizes.
There is a tradition in my house that every weekend, I make pancakes or waffles for my kids. They aren’t just any ordinary pancakes/waffles. I tend to make a twist to them. Usually something different every time. This weekend was Banana Waffles topped with Strawberry slices. What my kids didn’t know either is that I added a bit of flaxseed to the mix. I have heard about flaxseed and its healthy properties and I wanted to experiment a bit. With this recipe my kids didn't even know it was there and ate every bite.
Ingredients’ you’ll need:
1 ½ Cups of pancake mix
¼ Cup of Milled Flax Seed
1 Cup of Water
1 - 2 large bananas chopped
4-5 Strawberries sliced
Stick of Butter
The water amount may be different depending on what type of pancake mix you use. I used a generic pancake mix.
To Make:
Heat griddle, waffle iron, or frying pan. Coat with butter.
Mix all ingredients’, except the strawberries and butter, in a bowl until lumps are gone.
Pour into waffle iron, griddle or pan and cook accordingly.
Top with sliced strawberries and maple syrup
